  • 16 Dare Bear Paws Chocolate Chip cookies
  • 2 cups Mascarpone cheese
  • 1 cup Heavy whipping cream
  • 1/2 cup Powdered sugar
  • 1 tbsp Vanilla Extract
  • 1/4 cup Cocoa powder, for dusting
  • 1 cup Chocolate milk, for soaking cookies

Preparation


  1. Prepare Mascarpone Cream Filling: In a large bowl, whip heavy cream with powdered sugar until soft peaks form. Gently fold in mascarpone cheese and vanilla extract until smooth and creamy.
  2. Assemble the Torte: Line an 8-inch springform pan with parchment paper.
  3. Arrange dry Bear Paw cookies vertically around the perimeter of the pan, forming a circle that resembles paws gently holding the torte.
  4. Quickly dip additional Bear Paw cookies into chocolate milk, making sure they are moist but not overly soggy.
  5. Add a layer of chocolate milk-soaked Bear Paws cookies flat across the mascarpone filling.
  6. Spread half of the mascarpone filling evenly inside the cookie perimeter.
  7. Add another layer of chocolate milk-soaked Bear Paws cookies flat across the mascarpone filling.
  8. Cover cookies with remaining mascarpone filling, smoothing the top.
  9. Refrigerate the assembled torte for at least 4 hours or preferably overnight.
  10. Before serving, carefully remove the springform ring.
  11. Generously dust the top of the torte with cocoa powder.
